Ingredients
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 2 tablespoons mango chutney
- 1 tablespoon low-sodium soy sauce
- 3/4 teaspoon grated peeled fresh ginger
- 113 gram skinless, boneless chicken-breast halves
Cooking spray
- 8 cups mixed salad greens
- 1 cup diced peeled mango
- 3/4 cup diced peeled avocado
Preparation
Take a bowl and mix oil, juice, chutney, soy sauce, and ginger. Keep the chicken breasts on a large dish and add 2 tablespoons of that oil mixture on the chicken. Coat the chicken and keep it aside for 5 minutes. Prepare the grill and place the chicken on grill rack. Use cooking spray so that it does not stick. Cook until chicken is done. Slice the chicken breasts crosswise into strips. Take a bowl and mix other ingredients along with mango and avocado. Place the chicken pieces and serve after drizzling the rest of the dressing.
