Chicken and Waffles

Chicken and waffles, a classic combination indeed! But when it comes to healthy recipes, it’s not every health-conscious person’s favorite. But you can give it your own healthy spin. Presenting chicken waffles, the healthier way!

Ingredients

Waffle
  • 200 g grated raw Sweet Potato
  • 3 Egg Whites
  • 1/4 cup Green Onions
  • 1 tsp Cumin
  • 1 tsp Onion
  • 1 tsp Garlic Powder
  • Pinch of Sea Salt and Pepper
Chicken
  • 4 oz Chicken Breast
  • Seasoning: Garlic, Cumin, Paprika, Sea Salt, and Pepper to taste
Sandwich Toppings
  • 1 tbsp Greek Yogurt
  • 1/4 cup Spinach
  • 3 Tomato slices

Preparation

Take a bowl of grated, raw sweet-potato. Add three egg whites and all the seasonings to the bowl. Mix well. Set your waffle iron on medium-high heat. Don’t forget to spray with coconut oil to prevent the waffle from sticking. Pour the batter onto the waffle iron and spread evenly. Cook until the waffle is cooked. Meanwhile season the chicken breast. Cook it in a skillet. Now make your sandwich and add the toppings according to you wish.
