A totally delicious chicken lasagna recipe with a creamy white cheese sauce is apparently, always a cook’s & eater’s favorite, and great for any kind of pot luck. Layered lasagna noodles with tasty bits of chicken, cheese and a heavenly mushroom sauce, makes it a dream-food on the table. Ingredients
SAUCE
4 tbsp unsalted butter
4 tbsp all-purpose flour
2-3 cups low fat or fat free milk
1 cup chicken broth
1 egg
1/3 cup egg whites
½ cup parmesan cheese
INSIDE LAYERS
1 tbsp of Extra Virgin Olive Oil
1 cup finely chopped onion
1 tbsp garlic minced
250g of boneless chicken breast (diced)
1 cup broccoli, cut into small pieces
1 cup cauliflower, cut into small pieces
¼ cup parsley
REMAINING INGREDIENTS
½ Lasagna noodles
½ cup reserved sauce
¼ cup Parmesan cheese
1 ½ cups Mozzarella cheese, grated for layers
½ cup Mozzarella cheese, grated for top
Preparation
Sauce:
Take a large nonstick pan & add butter, after melting butter add flour, stair for a while. Add milk, whisk until smooth.
Stir in broth and constantly, until thick.
Beat eggs in separate bowl, add small amount of sauce, then combine egg mixture with all sauce. Stir in parmesan cheese.
Cook the lasagna noodles according to package directions.
Saute chicken in olive oil with onion and garlic until chicken is almost cooked. Stir in broccoli and cauliflower, cook 5 minutes or until tender.
Final Step:
Take a 9″x 13″ pan then add a few Tablespoons of sauce on bottom of pan.
Then few layer of Noodle after that chicken mix, sauce, mozzarella. Finish with noodle.
Put 1/2 cup reserved sauce on noodle top layer and sprinkle with 1/4 cup parmesan cheese.
Bake 350°F for 50 minutes or until bubbly. Remove and sprinkle the 1/2 cup mozzarella cheese on top. Let set for 15 minutes before cutting.
