Baked Healthy Chicken

Craving for something delicious and healthy at same time? Try Microwave Fancy Baked Chicken .
The preparation time is 20 minutes (approx). Serve it with some Brown rice or Basmati rice, and make a complete meal.

 

Ingredients

  • 2 cups boiling water
  • 1 cup bulgur wheat
  • 1 tsp. instant chicken bouillon granules
  • 1/8 tsp. pepper
  • 2 tbsp. butter
  • 1/4 cup seasoned bread crumbs
  • 2 tbsp. Parmesan cheese
  • 1/4 tsp. garlic powder
  • 1/8 tsp. paprika
  • 2 whole med. chicken breasts (about 1 1/2 lbs.), skinned, boned and halved lengthwise

Preparation

In a 1 quart microwave safe casserole combine water, bulgur, bouillon granules and pepper. Cook in microwave oven, covered, on 100 percent power (high) for 4 or 5 minutes or until bulgur is done, stirring once.
In a 1 cup glass measure cook butter uncovered, on high, for 45 seconds.
Combine bread crumbs, cheese, garlic powder and paprika. Brush meaty side of each chicken pieces with some of melted butter. Coat same side with crumb mixture. Place chicken, crumb side up on microwave- safe rack in microwave safe dish. Cook on high 6-7 minutes until chicken is tender. Serve with bulgur mixture.
